From My Table To Yours Sunday-Pumpkin Spiced Muffins







Happy Sunday!  So let me ask.....who loves pumpkin?  ESPECIALLY pumpkin bread or muffins from Starbucks?  ME!!! I found this recipe and did not think I would love it as much as I do.  AND they taste (in my opinion) exactly like the pumpkin loaf from Starbucks.  The pumpkin loaf is one of my go to's when I want something to go with my coffee from there.  So to say I was so excited to find this recipe in a Weight Watcher form would not be a lie.

Before I give ya'll the goods, I want to share what I've been up to this past weekend.  A couple of weeks ago I finally bought a Cricut.  I'm sure my friend Amy who has a shop in Etsy ( click HERE to visit her great shop) was happy so I'd stop bugging her to make me things ;) .  Now when I have an idea or see something I'd like to make a version of I can just do it myself.  I've got a really cute shirt that I am making my sister coming up but I haven't cut it yet.  So be on the look out for that :)

And now for the main attraction!  This is one of the easiest recipes ever.  The RECIPE I found is from 2 Bees in a Pod.  Another great thing about this recipe is that it makes 24 FULL SIZE muffins.  Most recipes I have found are for mini muffins so I was really happy to find a full size recipe.



This recipe is a 3 ingredient recipe and I use my Kitchen Aid mixer but before I had it I used a hand mixer.  With the pumpkin being 0 points it comes to a 3 point muffin.  When you put in the spiced cake mix, don't freak out when you see how many points is in the whole mix.  I did a double take.  Then I remembered I was making 24 muffins and all was well in the kitchen again.



While my 3 ingredients are mixing I line my muffin tins.  I use the brownie pan from Pampered Chef and depending on my mood, sometimes I'll just spray it and put the mix in but if I don't feel like it I'll just go ahead and throw some liners in there.  They still come out square.  I also use the medium scoop from Pampered Chef.  If you like what you see from Pampered Chef click on Heidi's link on the right hand side and get you some,  you won't be sorry :)



Once it's done I put a hefty scoop into each liner.  After you've filled all of them, there will be a little left over so I just distribute the rest into the liners that look less than the others.  I also pick them up and hit the bottoms a little bit to spread it out in the liner.


Put them in the over at 350 for 20-25 minutes (I did 23 minutes). 


When its finished I left them cool for about 5 minutes in the tin and then I move them to the cooling rack.  Another great purchase from Pampered Chef.  I do not receive any perks from the mentions from Pampered Chef lol.  I was raised on Pampered Chef and really believe in their products.  They are amazing.


Fix yourself a cup of coffee and grab a muffin...and ENJOY!
Good morning ya'll!  It may be a Monday but it's started out to be a really great Monday for me!  This morning after I weighed in I lost.... 2.2 lbs!!!  Down 66.8 total so far!


2.2 may not sound like much but I'll take it!  I'm very content with losing 2 lbs a week.  Don't get me wrong,  I don't mind those 5 lb weeks either, but I feel like losing it like this will help keep it off in in the long run.  When I had my surgery I lost big numbers every week.  And while I'm grateful (SO GRATEFUL) for the surgery because it helped me get a big chunk of the weight off, I can't be losing that much every week.

Some of you know that I got myself a bicycle in the fall, but it's been out of commission since then.  My sweet husband got my bike back to working and yesterday I was able to go on a bike ride!  I only went 12 minutes and 1 1/2 miles before my booty said that I needed to stop but hey!  That's more than what I would've done with out it.  I'm easing myself into it so I don't know if I'll take another bike ride tonight or just walk.  With it getting warmer it's more motivation for me to get out and move.  I'm a total hibernator in the winter.  I don't like going out in the cold at all.  Thank goodness for spring!  Hope ya'll have a great Monday!!

From My Table To Yours Sunday-Biscuits & Gravy Bake with a side of John Stamos



Happy Sunday!  I hope everyone has had a great weekend so far!  We still have today before we have to get back to the work grind, so enjoy it :)  Before I get to this weeks recipe, I wanted to share a few pictures from Friday night!  An amazing lady I met when I was in American Business Women Association and reconnected with when we both had jury duty together.  She messaged me asking if Travis and I wanted her tickets to see The Beach Boys at the Wagner Noel because she and her husband couldn't make it.  I said sure!  I have always enjoyed the Beach Boys growing up and really wanted to see them.  Little did I know, her seats were 3rd row!!! John Stamos was with them at this show!  Most people may not know but he is friends with them and basically an honorary Beach Boy.  We were so close I think a little bit of John Stamos sweat hit me....ok I'm kidding, wasn't that close.  That would probably be restraining order close lol.




Ok, on to why you're really here.  Today's recipe is Biscuits and Gravy Bake by Drizzle Me Skinny.  I have loved most of her recipes I've tried, but this is our favorite!  Oh and also...I'm not a cream gravy kind of person.  I know I'm strange.  I get it from my Mama.



Here's the starting line up.  I will admit, I was a little skeptical of turkey sausage.  I didn't think it would be good.  Boy was I wrong!  It's so good!  I like to have it with scrambled eggs not in the casserole too.


 While the sausage is browning I start cutting my biscuits into sixth's.  I could not find a 7.5 oz can of biscuits so I had to weigh out biscuits myself to get it to the right amount.  It's basically 7 1/2 biscuits with the ones I use.  But double check with the biscuits you use.





Since I can't find the 7.5 oz can I have 2 1/2 left over.  Thank goodness for this little gadget my husband got me for Christmas.  It has saved me from throwing so much food away.  I love my food saver.



Since I'm not a cream gravy girl, I don't make cream gravy all that well. Thank goodness for gravy packets.  Super easy to make.


While I wait for the gravy to cook I measure my liquid egg out and have it ready to pour.  Here's my assembly line.  I pour the egg over the biscuits, gravy over eggs and biscuits, and then add the crumbled turkey sausage to the top of it.



Cook it at 350 for 20 minutes.  Once that is done, removed from the oven and add your cheese.  If you don't know by now, I love Trader Joe's lite Mexican cheese.  Less points that the others I have found and so good!




You'll cook it for another 10 minutes.  Once it's done, remove from the oven and let it sit for about 5 minutes just to cool down.   Once that happens, don't forget to weigh it and divide to find your serving size.    Here is his and hers plates.   Travis added a green chile sauce and a hot sauce he found at Trader Joe's.  He said it was really tasty.   Enjoy!







Happy Friday!  Thank goodness this day is finally here!  It's been a long week and I am looking forward to sleeping and relaxing this weekend!  Here's my Fab Five Friday :)

1.  One of my favorite snacks right now is turkey pepperoni and a piece of Baybel lite cheese.  It's so good.  Kinda addicting. Only 4 points and super tasty when you are craving salty meat and cheese lol.

2.  A friend of mine started a Facebook page for people to encourage one another while working on their health and mental health.   I made a post about wanting to encourage people on little accomplishments as well as their scale going down.  I used the example of me being excited to clip my toe nails with out getting a workout while doing it and it got me thinking about the things I couldn't do pre surgery.  I get a little bit of happy tears thinking about the things I can do now.  No seat belt extender on the airplane, I can clip my own toe nails, I can sit in a booth comfortably, I can ride amusement park rides, When I look at the weigh limit on things I'm under it, and so many more!  When I had my surgery I had a list of things like that I wanted to accomplish.  Since I started in August I have something new on my list.  I want to go to iFly and do indoor skydiving!!  My sister in law said she'd do it with me.  I'm still working on my husband.

3.  I am so ready for baseball season to start.  I love going to Rockhouds games and just being outside enjoying the great weather and watching some baseball.  I always liked baseball but really started to love it when Travis and I started dating and he started teaching me more about it.  Don't get me wrong...I'd much rather be at a Texas Rangers game but I'll take what I can get...

4.  I'll give you a hint to what kind of recipe I'm posting on Sunday.....Are you ready?  Ok, here it is.  Its a really good recipe :)  There you go! lol  Just Kidding!  It's a breakfast recipe that we have loved since we started this journey.  It's a good southern type breakfast.  Trust me when I say you're going to love it too.

5.  I am getting to go to the Beach Boys concert tonight!  I am sooooo excited!  A friend I knew through American Business Womens Association gave me her tickets because she and her husband can't make it.  She didn't tell me they were 3rd row!!  How awesome is that!  PLUS!  John Stamos is playing with them tonight!  I can't wait to show pictures of it!
Happy Monday!! I was so excited when I woke up this morning because it’s Weigh In Monday and I knew I had done really great this week! I lost....6.2 this week!!

Again, not everyone is going to have a big loss like that and I am coming off of a gain so I was so stoked to see that. 

This past week I didn’t take advantage of my extra weekly points to much until last night. I was having a sweet tooth and decided to make a Weight Watcher peach cobbler .  It was good (not as good as the real deal) and it wasn’t many points at all. It was about 4 points and worth it.   I also got in more water than I had been. It was something I was really working on this past week.

From My Table To Yours Sunday-Turkey Chili Mac





Ya'll!  I am so excited to share this recipe with you!  Turkey Chili Mac by Organize Yourself Skinny is what's on the menu today.  It was so delicious AND there was enough for a couple of lunches during the week.  This is a great comfort food recipe.  It was husband approved (even though he'll tell you "once he added Cholula" lol) and it definitely is approved by me.



Here's the starting lineup.  The recipe did call for jalapenos, but I didn't put them in there.  I may put an extra can of Rotel in the next time I make it though.  I noticed that the whipped cream cheese from H-E-B is the same calorie content as the Weight Watchers so you could probably use any brand but I would for sure recommend whipped.  It melts better (or I feel like it does).   There was also a spice called coriander that I had never used (or heard of) before.  I bought it but I'm not sure if it is something you could just leave out.  Not really sure what it brought to the table.



Brown the ground Turkey and when that is done add the spices to it.  Let it cook for just a minute and then add the Rotel, beef broth, and the macaroni.  I used the regular sized noodle but you can always use the bigger one.  It just won't have as many noodles as the other.  After I added the macaroni, I let it cook for about 10 minute or so covered.  I feel like covering it helps the macaroni cook faster/better.


While the macaroni is cooking, in a medium sized sauce pan, I warmed the milk.  Once it became pretty warm I added the 4 oz of cream cheese to it and began melting it.  I kept stirring it to get it to melt a little better.  Once I had the cream cheese melted I added the shredded cheese to melt as well. When everything is melted it'll be a bit of an orange color.  After I checked to make sure the macaroni was done, I added it to the big pot and cooked it for 5-10 minutes longer.  I feel like it tastes better if it cooks together for a few min.

Yep......It smelt {THAT} good!


It’s Frrrriiiiddddaaaayyyy! TGIF!  {AND} it's Fab Five Friday!  Here's my randomness for the week!



1.  Trader Joes's....We love Trader Joe's.  I know there are people who think it's over rated but honestly its not.  I can find so many good things at TJ's that are great quality and delicious within the right point range for me.  There are things in the regular grocery stores that are similar to the items I purchase there but they are twice the points.  And honestly....it's either the same price or cheaper.



When we go we have to stock up.  We aren't sure the next time we will be around a TJ's so we make sure that we are good for a bit.  We love the turkey corn dogs (I take them out of the package and use the Food Saver because they come in cardboard boxes).  State Fair use to make a turkey corn dog that was really good but I haven't seen them in the grocery stores in years.  These are especially good in the air fryer.  Travis loves their bagels (I haven't tried them because I haven't wanted to spend the points on them).  Their Lite Mexican blend cheese is so good and it's a point less than the reduced fat or "lite" cheeses I have found at the store.  So I definitely stock up on those.  Travis loves the frozen enchilada's because they fall into his calorie intake for lunch and they are delicious!

2.   I can not wait for ya'll to see the recipe I have for From My Table To Yours Sunday!!  It was delicious and so easy to make.  We had some left over for our lunches the rest of the week and it's just as good warmed up.  It definitely will be in rotation at the Eckert's household.

3.  I'm still in shock about the college scam that Lori Loughlin and Felicity Huffman are involved in.   I mean....Felicity Huffman's bail was more that what she bribed...

4.  I wish I were still at Disneyland....

5  I really wish I had more to say but it's been a really long week at work.  One of my favorite people gave her notice and I've been doing interviews today.  They are a beating sometimes.  This time it's going to be hard because I have like 3 of them so far.  I'm making my decision Monday so at least I don't have to decide today.

Happy Weigh In Mon.....er...I mean Wednesday!  I have had a trying week with my plan.  I had every intention of staying on plan while I was in Austin for my husband's grandfathers funeral but it didn't happen that way.  I did great on making sure at least my portions weren't out of control but chose poorly on what I ate.  I gained .8 (there is a point before the 8 lol) and while it could have been so much worse I was kind of sad that I didn't get my Disneyland gain off.  It will happen this week or at least half of it.  

{CORRECTION} I LOST .8 lol...I did not gain I LOST! I misread my WW ap earlier...oopsie







I had saw where a lady had pinned a picture with her weight loss for each month (I think it was a different year though) and thought how cute!  And to be able to see it in black and white to see how you did for the month and how continuous it is.  So I found this on Pintrest and started tracking in January.  I can't wait to see what it looks like at the end of the year.

From My Table To Yours Sunday-Bake Spaghetti





Happy From My Table To Yours Sunday!! I am currently in the Austin area with my husband and his family. His grandpa has passed so we are here for that. He was a great guy and I absolutely loved hearing him speak. He grew up in Brooklyn, NY and he never lost his accent. It was the best :) he will be missed by all.

With that being said, I don’t have pictures to go with my recipe from my personal experience of making it but I wanted to share a recipe.

My recipe today, Baked Cream Cheese Spaghetti Casserole,  comes from Jenna at Recipe Diaries.   Yes...it is Weight Watcher friendly lol. It’s a higher point meal (10 sp) but worth every point. And again...husband approved!



This such a great recipe on so many levels. It’s so tasty, it’s quick to put together, and the left overs make an amazing lunch! {Don’t forget to weigh the pan before and after to get your correct serving size}

The only changes I make is sometimes I use ground elk instead of extra lean ground beef. I’ve never tried ground turkey but I think it would be amazing with it. I also use the Weight Watcher cream cheese. Because it’s whipped it makes it so much easier to mix with the spaghetti.  I also use minced garlic from a jar. We love us some garlic so I put quite a bit in.

This is definantly something I make when I’m wanting a comfort food.

Happy Fab Five Friday! I was a part of a link up called 5 on Friday a while back and even though they stopped the link up I really liked the idea of posting 5 random things that I was into or thinking about for the week or that day.

This Fab Five Friday is all about the face! 

1.



 I had terrible skin when I was younger. It wasn’t from lack of washing my face (although I’m sure sweating playing tennis then reapplying my makeup to go play more tennis because I had a crush on one of the juniors that would be there didn’t make things any better), I was just dealt some bad skin. I have tried everything. All the popular name brand items to the grocery store brands. I had been to the dermatologist. I had done the medicine’s and creams.  When Rodan + Fields came out I’ll be honest. I thought it was an over priced fad. One day I started getting this weird dry patch on my face and couldn’t take it anymore. I decided to pay for RF and try it. I mean I had tried everything else, whats one more thing. I am so glad I did. My skin has never looked so good. The soothe line is perfect for my sensitive skin. I also use the roller and the serum that goes with it and an eye cream that’s amazing too. My friend that is my rep gave me some of the lip serum for Christmas and it complete took my dry lips to normal with in two uses.

I absolutely love this foundation! It is full coverage and trust me...it does last all day. At the end of the day when I wash my face I want to see makeup on the washcloth so I know it’s still there. I get that result with this foundation. It’s not heavy and doesn’t make my face feel icky. It goes on so smooth. I use a beauty blender type sponge to apply it. And I just have to dab it on and boom...I am covered!

I {LOVE} this mascara! It’s amazing! Like my skin, my eyes are sensitive as to what I put on them. I had my fair share of eye infections also when I was younger. I am very conscious as to what I put on them now.  This mascara gives a full look to your lashes.






4.  
This highliter is from Drew Berrymore’s makeup line Flower.  I’ve tried this and two different lipsticks from her line and I have liked them all. At first I thought it was exclusively at Walmart but Ulta carries it also. 



5.  About a year ago I started watching makeup tutorials on YouTube. It started because I am not good at eye shadow at all. I have only improved a very small bit but I have picked up so many tips in other areas. I had no idea that concealer went on the OUTSIDE of your foundation. I always thought it went underneath. That changed my world lol.  Now, there are some makeup tutorials that are a bit shall we say...young....for me. I’m not about to do some of the crazy colors or techniques they do. I have found two that I really love to watch and have gotten some really good tips from. Laura Lee and Tati are the two that I am subscribed to and will go to check and see what they have posted when I get a notification.

Hey hey hey!  I'm back!  Disneyland was amazing!  I love Disney.  It's just a magical place!  Ok....gonna get this out of the way.  I gained 4 lbs on this weeks weigh in.  I did eat some good things and worth every bite.  Churros, frito pie in a bread cone (I didn't eat the bread cone part...it wasn't very good), breakfasts, Mickey shaped ice cream bar, among a few other things.  I'll get it off in no time.  I'm not worried :)

We rode a ton of rides this time!  I don't know if its because the kids are older or what was exactly going on but that's what we did.  We rode the Radiator Springs ride, I don't even know how many times.  We  love that ride!  It's so fun and fast!  Another ride we rode quite a few times was the tea cups.  So fun, especially at night!  The Midway Mania is a good fun ride too.  A little competition during the ride never hurt anyone :)




Something great about Disney and a way to see characters without having to take away from time in the park.  Unfortunately at Disneyland there are only 4 character meals, Mickey Tales of Adventure, Goofy's Kitchen, Minnie and Friends, and Donald Duck's Seaside Breakfast.  They are coming out with a princess breakfast starting March 30th!  It looks so fun!  Previously there was a restaurant called Ariel's Grotto that was awesome!  All the princess' were there and would stop by each table.  Looks like we will need to make another trip :)



We love visiting the Bippity Boppity Boutique when we are at Disneyland.  They now offer services for boys.   Knight packages are available for them and they get their hair gelled/styled along with a knight shirt and shield and sword.  They put "dragon scales" on top of his hair too.  Two years ago when we were at Disneyland was the first time Kenner had an appointment with BBB.  She chose a classic bun and looked so pretty.  I loved the style she chose this time too!  I had read a blog before the first time and it suggested that you make your BBB appointment towards the end of the day so that if your princess chose a crazy hair style you didn't have her looking like she just walked out of an 80's video in all the pictures.  No truer words have ever been typed.  There are some crazy ones.



Kenner is a mess.  But she is a cute mess and she's our mess.  She wanted to buy some new ears but she couldn't decide which ones she wanted.  Kenner had her mom take a picture of her with each set of ears on so she could see them and decide.  A mirror wasn't good enough to help make the decision :)
